Sauteed Salmon Patties with Mango Sauce

These patties are great with just a tossed salad or steamed broccoli. The mango sauce is prepared with the perfect seasonings to flavor this dish.
Ingredients
- Salmon Patties:
- 1/2 cup shredded yellow squash
- 1/4 teaspoon salt
- 1 14.75 ounce can salmon
- 1 egg
- 1/4 cup seasoned dry bread crumbs
- 1/4 teaspoon lemon pepper
- 1/2 teaspoon Worcestershire sauce
- 1/4 cup chopped onion
- 1 tablespoon olive oil
- Mango Sauce:
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1 teaspoon curry powder
- 1 teaspoon ground ancho chile pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon mango chutney

Method
Patties: Place squash in a colander over a bowl and toss with salt. Place a plate weighted with a can on top of the squash and allow to drain 30 minutes. Meanwhile, mix egg, onion, bread crumbs and salmon together. Pat squash dry with paper towels and fold into salmon mixture with pepper and Worcestershire sauce. Refrigerate 30 minutes before proceeding. Sauce: In a small bowl, mix together mayonnaise and yogurt. Season with curry powder, chile pepper and garlic powder. Stir in mango chutney then cover and chill at least 30 minutes. Form salmon mixture into 4 patties. In a frying pan, heat olive oil. Place patties in pan, brown on each side, turning gently. Drain on paper towels and serve with sauce.
