Scrambled Fish

Sauteed fish in a rich and creamy sauce with bacon, olives, jalapeno, red pepper, and mushrooms.
 

Ingredients

  • 1 lb Tilapia fillet(s)
  • 3 Tbsp butter
  • 2 slices bacon, cooked
  • 9 green olives, chopped
  • 1/4 cup chopped onion
  • 1 Tbsp chopped jalapeno
  • 1/8 cup chopped red pepper
  • 1/8 cup diced mushroom
  • 1/2 cup half and half

Method

Cook tilapia in butter over medium heat until it flakes. Flake fish in pan. Add all remaining ingredients except half and half. Cook 2-3 minutes, then add half and half. Cook, stirring occasionally until half and half is almost absorbed. Season with salt and pepper to taste.
