A saucy mixture of tomatoes, tomato soup, ketchup, vegetables, bacon, lemon, sherry & seasonings accompanies the shrimp and is served over rice.
Cook bacon until crisp, remove from pan and reserve. Pour off bacon fat. In same pan, cook butter, onion, celery, red and green pepper until tender; transfer to a large pot along with the cooked bacon.
Add all other ingredients except the shrimp, sherry and the parsley used for garnish. Cook slowly 1 1/2 hours until mixture thickens. (May be made ahead up to this point, if desired.)
Add shrimp. (If using raw shrimp, cook mixture for a few minutes just until shrimp are done; if using cooked shrimp, just heat through.
Add sherry, heat through; serve shrimp and sauce over rice. Garnish with chopped parsley.
Notes:
Great dish for entertaining. Can be made ahead and reheated before adding the shrimp. Great for buffet table--great taste and colorful. Can also use medium shrimp, if smaller size shrimp is preferred.
