Seafood Maquechoux

Add your favorite seafood to this dish of corn, tomatoes, celery, mushrooms, onion and peppers in a creamy sauce--and serve over rice.
Ingredients
- 5 cups fresh sweet corn
- 1/2 cup onions
- 1/2 cup green onions
- 1/2 cup bell pepper
- 1/2 cup celery
- 1/2 cup chopped mushrooms
- 1/4 cup corn syrup
- 1 large tomato, peeled and diced
- 24 oz evaporated milk
- 3 cups raw fresh seafood
- 1/2 cup butter
- Salt and pepper to taste

Method
Saute onions, green onions, bell peppers, celery, and mushrooms in butter until softened. Add corn, syrup, & 12 oz evaporated milk; cook on low-medium heat about 15 minutes. Add seafood and 12 oz evaporated milk. Simmer on low for 10 minutes or until desired thickness. Season to taste. Serve over rice.
Notes: Corn syrup may be substituted with sugar, sugar substitute, or honey.
