Seafood sauces tend to fall into three main categories. Butter (or clarified butter) with a few herbs or some garlic is the classic accompaniment for lobster and other shellfish. Mayonnaise based tartar sauce often stars with fried fish. And sweet or piquant cocktail sauce, often heated up with horseradish, is the preferred dip for shrimp. Finally, don't neglect the simplest sauce of all: a squeeze of fresh lemon juice.
