Sea Scallops Scampi En Croute


Refrigerated pie crusts make it a snap to prepare this elegant seafood entree. Just fill the pie crusts with scallops, butter and garlic, then bake.



Ingredients:

  • 2 refrigerated pie crusts(15 oz.)
  • 1 lb sea scallops(about 8)
  • 1 tbsp butter (unsalted)
  • 1-2  tsp fresh crushed or jarred crushed garlic
  • 1 tbsp all purpose flour
  • Olive oil spray

Method

Dust a flat counter with flour. Allow pie crusts to warm to room temperature and cut in half, after rolling out flat. Cut each sea scallop in quarters and put two sea scallops pieces in the center of each pie crust half circle. Add to each scallop 1-2 tsp crushed garlic and 1 tbsp unsalted butter. Carefully raise crust edges and seal by pinching with your fingers. Place on olive oil sprayed cookie sheet and bake at 400 degrees for 30-35 minutes or until crusts are golden brown. Serve hot with a tossed salad. Usually serves four persons.

Notes: Bay scallops may be used also, using about 8 per pie crust half.
