Sesame Lime Orange Roughy

A light breading with Italian bread crumbs and sesame seeds keeps this light, white fish moist and crisp.
Ingredients
- 1 1b orange roughy
- 1 1/2 cups Italian bread crumbs
- 2 tbsp sesame seeds
- 1 tsp dried parsley
- 1 tsp Old Bay seasoning
- Salt and pepper to taste
- Fresh lime
- Extra virgin olive oil

Method
Preheat a large skillet to medium high. Rinse fish and pat dry. Mix dry ingredients together and dredge fish, patting to coat well. Place fish on plate and drizzle fish with olive oil. Drizzle about 1 tbsp oil in hot pan and add fish. Cook until golden crust forms, 5-7 minutes. Flip and cook on other side until golden crust forms. Squeeze a little fresh lime on fish as soon as it is removed from skillet. Serve immediately.
