Shrimp and Spinach Enchiladas

Get ready!! This is a spicy meat-a-balla!!!

  • Servings: Serves 2
  • Prep Time: 5-10 minutes
  • Cook Time: 25-35 minutes tops
  • Total Time: Roughly 30 minutes


20 Pre-cooked Jumbo Frozen Shrimp, tales off and thawed
½ a Bag of Frozen Spinach
4 Corn Tortillas
1 can Chili Verde Enchilada Sauce, or if you're brave make your own- i have a great recipe for salsa verde that works really well if you add a little extra sugar!
2 cups Shredded Montery Jack Cheese
½ Med Onion Diced
1 Jalapeno Diced
½ Lime
2 tsp Cayenne
2 tsp Garlic Powder
1 tsp Cumin
½ tsp Crushed Red Pepper, or more to taste
dash Salt
dash Black Pepper
Pinch of Oregano


Preheat the oven to 400 degrees

Prepare Spinach according to package directions (nuke it or stove top whatever's easier for you)

Warm a skillet (Med-High) with a touch of olive oil Toss in onions and jalapeno

While the onion and jalapeno are sauteing

Coat the shrimp with the dry ingredients. **Please note: I rarely measure these out.** I say a pinch here a dash there- crank up the spicy, it's up to you- you have to eat it! :)

When the onions are nearly translucent toss in the shrimp and brown. (you may need to add a little extra olive oil)

Begin Heating a 2nd skillet to warm the tortillas. (If you're as lazy as I am use the same pan as the shrimp just scoot them to one side)

The shrimp are done when they're browned and hot. Squeeze a little fresh lime juice over the top. Reduce heat to keep them warm.

Heat the Tortillas until they are easily pliable

Fill 2 tortillas with the spinach, some cheese and the shrimp and onions (5 shrimp per tortilla). Place on an oven safe plate and roll them so the opening to the tortilla is face down. Cover with the green sauce and more cheese. Do the same for the other plate. place in the oven until the cheese melts and just starts to turn golden brown. (depending on the oven between 5 - 10 minutes. keep an eye on it... you'll know when it's ready.)

Be careful serving these... the plate is HOT!!!
