Shrimp and Sun-dried Tomato Pasta

Large shrimp & chopped dried tomatoes are combined with shallots & garlic in a white wine sauce, and then tossed with angel hair pasta.
 

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup shallots, finely chopped
  • 4 garlic cloves, finely chopped
  • 1/4 tsp crushed dried red pepper flakes
  • 1/4 cup pignoli (pine) nuts
  • 1/4 cup sun-dried tomatoes, packed in oil, chopped
  • 1 cup dry white wine
  • 1 lb. large shrimp, peeled and deveined
  • 1 lb. angel hair pasta
  • Salt, pepper, and Parmesan cheese to taste

Method

Heat oil in a large pan over medium heat. Add shallots, garlic, and red pepper flakes. Saute until translucent, about 2 minutes. Add nuts and saute until toasted, about 1 minute. Add tomatoes and wine. Simmer until wine reduces by half. Add shrimp and cook until they turn pink, about 2 minutes. Meanwhile bring a large pot of water to a boil. Add pasta and cook until just tender; drain. Toss pasta with shrimp, season with salt and pepper to taste. Top with Parmesan cheese and serve.
