Shrimp Fra Diavolo (variation #1)
|1 pkg||Angel Hair Pasta|
|Basil Infused Olive Oil|
|1||Sweet Red Bell Pepper, sliced thin|
|1||Onion, sliced thin|
|4-6 cloves||Garlic, minced|
|1 lb||Deveined, de-tailed shrimp|
|2 Tbsp||Chopped Sun Dried Tomatoes, jarred|
|Red Pepper Flakes|
|1 can||Diced Tomatoes, undrained|
|Salt, pepper mill|
|Shredded Parmesan, to top|
Start salted water to boil and prepare angel hair pasta as directed.
Heat oil in pan and add shrimp, cooking only until pink. Do not over cook shrimp.
Remove shrimp and add red pepper flakes, onions, and red peppers. Sautee. Then add garlic and sun dried tomatoes. Once all are cooked to desired texture, add the diced tomatoes and heat. Finish with adding back the shrimp. Salt and pepper to taste.
Toss mixture with drained angel hair pasta. Serve with parmesan on top.
