Shrimp Salad

Cooked and peeled small shrimp are stirred into mayonnaise along with green onion & green olives, and served on cabbage for a main dish salad.
 

Ingredients

  • 1 lb. of small frozen shrimp
  • 1 tablespoon Old Bay Seasoning for seafood
  • Pinch of onion powder
  • 1/4 tsp of Old Bay Seasoning
  • 2 tablespoons low-cal mayonnaise
  • 4 chopped green onions
  • 6 green olives, chopped
  • 1-2 tsps. of liquid from the jar of green olives (to taste)
  • Pepper to taste
  • 10 oz. package of Shredded cabbage

Method

Boil Shrimp in the 1 tbsp. Old Bay seasoning and water for 2 minutes or until they float to the top. Drain, peel and season the shrimp with remaining Old Bay and Onion Salt. Mix shrimp, mayo, green onion, olives, and olive juice. Add pepper to taste. Serve on the shredded cabbage

 

Notes: I serve this with tomato wedges and Trisket crackers. This is a light meal that is fast and easy to prepare. It is a fresh lunch or dinner. Each dish has only about 3 1/2 grams of fat.
