Shrimp with Chipotle Sauce

This great dish makes a perfect summer meal with some fresh crusty bread and a good glass of crisp white wine.
Ingredients
- 2 lbs very large shrimp cleaned, about 16
- 1 cup white rice
- Basting sauce;
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon Tabasco sauce
- 1 teaspoon cayenne pepper
- 1 teaspoon minced garlic
- 1 teaspoon chopped green onion, green part only
- 1 teaspoon basil, finely chopped
- 1 teaspoon chopped oregano
- 1 teaspoon jalapeno, seeded and minced
- 1 tablespoon fresh lime juice
- Salt and ground pepper to taste
- 1/4 cup minced red onion
- 1 cup chopped red bell pepper
- Chipotle lime sauce;
- 1 tablespoon chopped green onion, green part only
- 3/4 cup sour cream
- 2 tablespoons chopped cilantro
- 1 tablespoon fresh lime juice
- 1/2 teaspoon chipotle chili powder
- Salt and ground pepper to taste

In a medium size sauce pan, cook white rice according to package directions, for 4 servings Meanwhile, prepare chipotle lime sauce and basting sauce. In a small mixing bowl, whisk together all ingredients for chipotle sauce. Set aside In a small mixing bowl, whisk all of the basting sauce ingredients. Set aside Heat grill to medium. Rinse shrimp and pat dry with a paper towel. Put 4 shrimp each lengthwise on 4 skews. Brush with basting sauce on both sides. Place on grill for 2 to 3 minutes. Turn and brush shrimp again and cook for 2 to 3 minutes. Add the chopped red pepper and red onion to white rice, stir until blended. Place rice in center of 4 plates and top with 4 shrimp each. Drizzle chipotle sauce over shrimp and rice. Garnish with a lemon twist. Serve with crusty bread.
