Wonton wrappers baked in a muffin tin make a perfect bite-sized appetizer when filled with shrimp, feta cheese, onions and roasted red pepper.

Heat olive oil and garlic in a large skillet over medium high heat. Salt and pepper shrimp and place into skillet. Cook until shrimp turns pink and turn to other side. Slightly brown shrimp and remove from heat. Cut shrimp into small pieces and place in a bowl. Add green onions, red pepper, and feta cheese to bowl with shrimp and mix all ingredients together. Place individual wonton wrappers into a small muffin pan and bake, at 350 degrees for 5 minutes, or until slightly brown. Remove from oven and add a scoop of the shrimp mixture into each wonton wrapper. Return to oven for 5-10 minutes or until well heated. Serve warm.
