Shrimp Wraps

This meal-for-two is made by filling whole wheat wraps with seasoned, cooked & cooled shrimp, plus radishes, cucumber & parsley.
 

Ingredients

  • 6 large shrimp, peeled, deveined and tails removed
  • 1 tbsp olive oil
  • 1 tsp Old Bay seafood seasoning
  • Juice of 1/2 lemon
  • 2 whole wheat wraps or soft flatbread
  • 1 tsp butter
  • 1/4 cup thinly sliced radishes
  • 1/4 cup sliced cucumber
  • 1/4 cup fresh parsley, stems removed
  • Salt and pepper to taste

Method

Rinse shrimp; sprinkle with olive oil and Old Bay. Saute or grill, over medium heat, until cooked through. Drizzle with lemon juice and allow to cool to room temperature. Spread butter on each wrap. Layer radishes, cucumber, and parsley in center of wraps. Split shrimps in half and lay 6 halves on each wrap.

 

Notes: Serve with a fruit salad for lunch or a light dinner.
