
This main dish salad combines shrimp with mango cubes, chopped tomato, onion, and a generous amount of cilantro. The salad is dressed with olive oil, lime juice, cumin and diced japaleno pepper, if desired, and served on greens.
Peel and cut mangos into 1/2-inch cubes. Mix with tomatoes, onion and cilantro. Add olive oil, cumin, juice from the lime, and jalapeno. Fold in shrimp. Mix well and adjust taste with salt and pepper. Serve chilled over spring greens.

Serve over a bed of mixed spring greens
