Shrimp, Chourico and Pineapple Skewers


Pieces of cooked Chourico, a Portuguese sausage, are threaded onto skewers along with chunks of pineapple and pieces of shrimp flavored with lime juice and some of the chourico renderings. The skewers are grilled to cook the shrimp, and seasoned with black pepper.



Ingredients:

  • 1 lb. Chourico
  • 12 large raw shrimp, peeled and deveined
  • 1 fresh pineapple
  • 2 limes
  • Black pepper
  • Skewers

Method

If using wooden skewers, soak in water while preparing ingredients. Cut chourico into 24 pieces and saute over medium-high heat for 2-3 minutes. Remove pan from heat, remove chourico from pan, reserving rendered fat. Add juice of two fresh limes to pan and add shrimp. Stir to coat shrimp with chourico renderings and lime juice, then remove shrimp and set aside. Peel and cut pineapple into 24 cubed pieces--reserve the pineapple top. Assembly of skewers: 1 piece each of chourico, pineapple, shrimp, pineapple, and chourico. Grill until shrimp is just pink. Lightly sprinkle with coarsely ground black pepper and serve.

Notes: Serving Platter--Place the pineapple top in center of platter and spiral grilled skewers around it. Scatter lime wedges.
