Shrimp Creole


Shrimp and vegetables are simmered in this cayenne-spiced tomato sauce.



Ingredients:

  • 1/2 lemon sliced
  • 4 whole black peppers
  • 2 lb. raw shrimp peeled and deveined
  • 4 slices bacon
  • 2 Tbsp butter
  • 1 clove garlic chopped
  • 1 cup chopped onion
  • 1 1/2 cup chopped green pepper
  • 1/4 cup finely chopped parsley
  • 1 1/2 cups sliced celery
  • 28 oz can tomatoes
  • 6 oz can tomato paste
  • 1 Tbsp lemon juice
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp ground red pepper
  • 1 bay leaf
  • 1/2 tsp dried thyme

Method

Bring 1 qt water to boil in large saucepan. Add lemon slices, black pepper and shrimp. Reduce heat; simmer 3 min. Drain shrimp, reserving 1 cup liquid. In same pan, saute bacon until crisp. Remove bacon, drain and crumble. To bacon fat, add butter, garlic, onion, green pepper, parsley and celery. Cook, stirring, about 5 min. Add reserved shrimp juice, bacon, undrained tomatoes, tomato paste, lemon juice, sugar, salt, pepper, red pepper, bay leaf and thyme. Bring to boiling, reduce heat, and simmer covered 30 min. Add shrimp. Simmer 5 min. Remove bay leaf. Serve over hot rice.
