Shrimp Italienne


Serve this flavorful shrimp recipe over saffron rice for a great main dish tonight for dinner.



Ingredients:

  • 2 T olive oil  
  • 1 T vegetable oil  
  • 4 T butter  
  • 1 T finely chopped garlic  
  • 1 T dried mushrooms, soaked in 4 T water, drained and chopped finely  
  • 2 green peppers, blanched, seeded and finely chopped  
  • salt
  • pepper
  • dry mustard to taste  
  • a little cayenne pepper  
  • paprika  
  • 1 1/2 lbs. shelled shrimp  
  • 2 T chopped chives  
  • 2 T finely chopped red onion  
  • saffron rice  

Method

Heat oil and 2 T butter. Saute garlic and mushrooms. Add green pepper. Season with salt, pepper, mustard, and cayenne. Sprinkle with paprika and add remaining 2 T butter. Add shrimp and shake over moderate heat 8 minutes, covering them well with sauteed mixture. Add chives and onion. Serve on saffron rice.
