Shrimp, rice and crisp vegetables in a spicy tomato sauce with curry powder and cayenne pepper.
Heat butter and oil in large saute pan and saute garlic about 1 minute.
Add red pepper, green pepper, onion, and snap peas.
Stir and saute for 2 minutes.
Add shrimp and cayenne pepper.
Stir and cook 2-3 min.
Add tomatoes and curry powder.
Stir and simmer for 2-3 minutes until shrimp are done and tomatoes are heated through.
In a large serving bowl, mix the hot cooked rice, shrimp and vegetable mixture.
Individuals may garnish with soy sauce or top with a pat of butter.
Notes:
Options: Use half shrimp and half scallops, substitute cooked chicken chunks for shrimp or add cooked kolbasi or other sausage.
Also good for people who are gluten sensitive.
