Shrimp & Rice Salt Free


Shrimp, rice and crisp vegetables in a spicy tomato sauce with curry powder and cayenne pepper.



Ingredients:

  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 2 large cloves garlic (chopped fine or crushed)
  • 1/2 green pepper (cut into medium chunks)
  • 1/2 red pepper (cut into medium chunks)
  • 1 small or medium sweet onion (cut into medium chunks)
  • 1 package frozen sugar snap peas (thawed)
  • 1 14.5 oz can diced tomatoes (salt free)
  • 1 lb large shrimp (peeled & deveined)
  • 1/8 tsp cayenne pepper
  • 1/2 tsp curry powder (Madras, hot)
  • 4 cup hot cooked rice( brown or white)

Method

Heat butter and oil in large saute pan and saute garlic about 1 minute. Add red pepper, green pepper, onion, and snap peas. Stir and saute for 2 minutes. Add shrimp and cayenne pepper. Stir and cook 2-3 min. Add tomatoes and curry powder. Stir and simmer for 2-3 minutes until shrimp are done and tomatoes are heated through. In a large serving bowl, mix the hot cooked rice, shrimp and vegetable mixture. Individuals may garnish with soy sauce or top with a pat of butter.

Notes: Options: Use half shrimp and half scallops, substitute cooked chicken chunks for shrimp or add cooked kolbasi or other sausage. Also good for people who are gluten sensitive.
