
Jumbo shrimp are marinated in a lime and garlic mixture, grilled, and served with a salsa containing lime and orange juice, vinegar, onion, plus finely chopped tomatillo and hot pepper.
Mix all the ingredients for the salsa together in a bowl; let stand at room temperature for 30 minutes before serving.
Take the Jumbo shrimp and peel (leaving the tail intact) then butterfly and de-vein them.
In a large bowl combine ingredients for shrimp marinade. Add butterflied shrimp, stir to coat, and cover. Marinade for 10 minutes.
Coat a grill rack with non-stick spray. Lay the shrimp cut side down on the rack and grill for 5 minutes or until shrimp are done, turning only once.
Remove and serve with salsa.
Notes:
This can be used as an appetizer or main dish. We like it as a main dish with a salad and some crusty bread.
