Shrimp with Pepper Salsa


Jumbo shrimp are marinated in a lime and garlic mixture, grilled, and served with a salsa containing lime and orange juice, vinegar, onion, plus finely chopped tomatillo and hot pepper.



Ingredients:

  • Salsa --
  • 1 Tb sugar
  • 2 Tb Fresh Lime Juice
  • 2 Tb cider vinegar
  • 1 Tb Fresh Orange Juice
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup finely chopped red onion
  • 1 habanero, serrano, OR jalapeno pepper (cored, seeded and finely chopped)
  • 1 tomatillo, finely chopped
  • Shrimp Marinade --
  • 1 lb Jumbo Shrimp
  • 1 Tb lime juice
  • 2 tsp extra virgin olive oil
  • 1 clove garlic, minced
  • Dash of salt

Method

Mix all the ingredients for the salsa together in a bowl; let stand at room temperature for 30 minutes before serving. Take the Jumbo shrimp and peel (leaving the tail intact) then butterfly and de-vein them. In a large bowl combine ingredients for shrimp marinade. Add butterflied shrimp, stir to coat, and cover. Marinade for 10 minutes. Coat a grill rack with non-stick spray. Lay the shrimp cut side down on the rack and grill for 5 minutes or until shrimp are done, turning only once. Remove and serve with salsa.

Notes: This can be used as an appetizer or main dish. We like it as a main dish with a salad and some crusty bread.
