Simple Salmon Cakes

Fresh salmon, combined with green pepper, onion and seasonings make the best salmon cakes you'll ever taste.
 

Ingredients

  • 12 oz boneless skinless salmon
  • 1/2 cup diced green pepper
  • 1/2 cup chopped green onions
  • 2 eggs
  • 1/2 cup Italian bread crumbs
  • 1 tbsp minced garlic
  • 1/2 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1/4 tsp dried dill
  • Pepper to taste

Method

In a large bowl, combine salmon, eggs, lemon juice, mustard, garlic, dill and pepper. Stir in green peppers, green onions and bread crumbs then form into 4 patties. Spray skillet with nonstick cooking spray. Cook salmon cakes on medium low heat for 5 minutes on each side, or until golden brown.
