Singapore Salmon Saute


Ginger and curry give this salmon entree a true felling of Singapore. Try this dish served over brown rice for a healthy and satisfying meal.



Ingredients:

  • 4 6 oz salmon steaks
  • 1 tbsp peanut oil
  • 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper
  • 4 tbsp mango nectar
  • 2 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1 tsp minced ginger root
  • 1 tsp honey
  • 1 mango, peeled, cut into small dice
  • 2 tbsp sliced water chestnuts
  • 1 green onion, minced
  • 2 tbsp crystallized ginger bits
  • 1/2 tsp lemon zest
  • garnish, chopped roasted peanuts and snipped cilantro

Method

Brush salmon with oil and season with curry powder, salt and pepper. Heat a nonstick large skillet over medium high heat. Add salmon and brown on both sides, about 4 minutes. Reduce heat to medium, cover pan and cook 6-8 minutes more or until salmon tests done. Remove to a plate and keep warm. To skillet add mango nectar and remaining ingredients and heat until hot and well blended. Place sauce in a serving dish and arrange salmon on top and garnish with peanuts and cilantro.
