Smoked Sausage and Shrimp in Creamy Coconut Sauce

A creamy, savory mix of vegetables, sausage, and shrimp served over rice.Ingredients
- 3 tbsp olive oil
- 2 lbs smoked sausages, cut into 2 inch lengths
- 1 medium onion, sliced
- 1 small green bell pepper, sliced
- 1 small red bell pepper, sliced
- 1 small yellow bell pepper, sliced
- 1 diced jalapeno pepper, optional
- 2 cloves garlic, minced
- 3 tbsp all purpose flour
- 2 1/2 cups vegetable broth
- 1 13.5 oz can coconut milk cream or to taste
- 1/2 cup oyster sauce or to taste
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp Old Bay seasoning
- 2 lbs raw large shrimp, peeled
- 1 sprig fresh rosemary, chopped

Method
Heat a wok, or medium saucepan, over medium heat then add olive oil. Add sausage and saute 5-10 minutes. Add sliced onion, peppers, and garlic then saute until onions are translucent. With a spatula, stir in flour, incorporating thoroughly. Slowly pour in vegetable broth and coconut milk while stirring constantly. As sauce thickens, add more broth and coconut milk until desired consistency and taste is reached. Stir in oyster sauce to desired taste. Add garlic powder, pepper and Old Bay seasoning. Simmer sauce 5 minutes, adjusting seasonings if needed. Stir in shrimp and fresh rosemary. Cover and simmer 5 minutes. Remove from wok and place into a serving dish. Serve over a bed of rice and garnish with a sprig of rosemary.
