If panninis are your thing try this easy and delicious version with smoked salmon and homemade pesto.
To make entire loaf into a sandwich for several, cut ciabatta in half lengthwise. Combine mayonnaise and pesto. Spread this combination over one half of bread. Place desired amount of smoked salmon over bread and then top with Swiss cheese. Brush olive oil on both sides of bread before heating the sandwich in a pannini toaster. Toast for 3-5 minutes.
Combine basil, walnuts, and garlic in food processor. With motor running add olive oil slowly. Turn off food processor and add cheeses, salt and pepper and process again. Makes 2 cups of pesto, more than enough for the sandwich.
