Southwest Shrimp Salad on Cilantro Waffles

It is amazing how the typical breakfast waffle goes with a savory shrimp salad. What a great addition to any brunch spread.
Ingredients
- 1 cup all purpose flour, sifted
- 1 cup whole wheat flour, sifted
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 4 tablespoons chopped cilantro
- 3 eggs, beaten
- 2 oz unsalted butter, melted
- 2 cups buttermilk
- 12 oz salad shrimp; peeled, deveined and cooked
- 1 cup corn kernels, cooked and cooled
- 1/2 cup mayonnaise
- 3 limes, juiced
- 2 shallots, minced
- 2 scallions, sliced on bias
- 3 scallions, sliced lengthwise
- 1 red bell pepper, peeled and finely diced
- Kosher salt to taste
- Freshly ground black pepper to taste
- 10 sprigs cilantro, washed and picked

Cilantro Waffles: Combine both flours, salt, baking soda and baking powder. In a separate bowl, combine eggs and sugar and whip until sugar dissolves. Combine egg and sugar mixture, butter, dry ingredients and buttermilk thoroughly. Fold in cilantro. Spray waffle iron with vegetable spray and cook waffles until golden brown. Southwestern Shrimp Salad: Combine shrimp, corn, cilantro, mayonnaise, lime juice, shallots, and scallions. Season with kosher salt and black pepper to taste. To assemble, place 1/4 waffle on 12 inch plate, slightly off center. Cascade 4 oz shrimp salad on waffle and onto plate. Garnish with scallions, sliced lengthwise, red pepper, and cilantro sprig.
