
A shucked oyster is placed in each of 4 ramekins, sprinkled with generous amounts of hot pepper sauce, dillweed, lemon peel, and nutmeg. Whipping cream is poured over, then an egg is added and baked.
Preheat oven to 375. Butter 4, 6-oz ramekins. In each ramekin place 1 oyster, 1 tsp hot sauce, 1 tsp dill, 1 tsp lemon rind, and 1 tsp grated nutmeg. Pour 4 ozs cream (1/2 cup) over oysters in each ramekin. Gently crack 1 egg into each. Add salt and freshly ground pepper. Bake for 15 minutes or till done.
Notes:
4 ozs diced shrimp or 4 ozs bay scallops can be substituted for oysters.
