Spicy Cornmeal Fried Catfish Po Boy with Corn & Okra Relish

Catfish is soaked in buttermilk, coated with seasonings and cornmeal, then fried and placed atop toasted individual bread loaves. It's topped with a vegetable relish seasoned with cumin, celery seed and vinegar.
 

Ingredients

  • 4 pieces catfish filets
  • 1/2 cup buttermilk
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried lemon zest, crushed
  • 1/2 cup yellow cornmeal
  • 1/2 cup all purpose flour
  • 2 cups vegetable oil
  • Relish:
  • 3/4 cup frozen corn kernels
  • 1/2 cup pickled okra, sliced
  • 1/4 cup pickled cocktail onions, chopped
  • 1/4 cup roasted red peppers, chopped
  • 1/2 teaspoon EACH salt, brown sugar, cumin seeds and celery seed
  • 2 tablespoons red wine vinegar
  • 4 individual crusty sandwich loaves
  • 2 teaspoons butter, softened
  • 1/2 cup mayonnaise
  • 2 cups shredded lettuce

Method

Place catfish filets in a shallow dish, cover with buttermilk and refrigerate for one hour. Meanwhile, make relish by dry-toasting corn kernels in a cast iron skillet for two minutes over medium heat. Remove from heat and cool. Mix corn together with next 8 ingredients; refrigerate until serving. Preheat oven to 400 degrees to toast bread. Add vegetable oil to a large skillet and heat to 350 degrees. Mix together the cornmeal and flour; drain off buttermilk from fish and season both sides with a combination of Old Bay seasoning, cayenne pepper and lemon zest. Dredge fish in cornmeal-flour mixture and carefully place in hot oil. Cook fish for three minutes per side. Remove from oil and drain on paper toweling. Spread softened butter on inside of bread and toast in oven for three minutes. To assemble the sandwiches, spread bottom half of bread with mayonnaise, followed by shredded lettuce, then a catfish filet; top with a generous amount of relish.

 

Notes: Fresh catfish, lightly fried and topped with a tangy vegetable relish makes a delectable "Po Boy." slightly different from the New Orleans tradition.
