Spicy Salmon Balls

Canned salmon is combined with jalapeno pepper, sour cream, lemon juice, shredded cheese and egg. The mixture is formed into balls, rolled in a crumb mixture, deep fried, and may be served as a main dish or appetizer.
 

Ingredients

  • 1 large jalapeno pepper, finely chopped
  • 1/2 Medium onion finely chopped
  • 2 cloves garlic finely choped
  • 1 14-15 oz. can Salmon, drained
  • 1/4 Cup Sour Cream
  • 1 Tb. lemon juice
  • 1 beaten egg
  • 2 slices bread broken into small pieces
  • 1/2 Cup shredded cheese of your choice
  • 1/2 Cup fine dry bread crumbs
  • 1/2 Cup grated parmesan cheese
  • 1 Tb cornstarch
  • Oil for deep-fat frying

Method

In medium bowl mix peppers, onion and garlic. Mix in canned salmon, sour cream, egg, and lemon juice. Then add half of the bread crumbs and the shredded cheese. Mix well. (Add more crumbs if necessary to hold mixture together.) In separate bowl combine remaining half of the bread crumbs, the parmesan cheese and cornstarch. Form Salmon mixture into 1" balls. Roll in bread crumb mixture. Fry in deep fat fryer until crispy. Drain off excess oil on paper toweling.

 

Notes: Salmon balls can be served hot as a main course. You can also refrigerate them to serve as an appetizer at your next get-together. They are great for dipping in your favorite sauce.
