Spicy Southwestern Shrimp

Shrimp is marinated in a mixture of citrus juices, Cajun seasoning and chili powder, then simmered in tequila with cilantro, onion, bell pepper and mushrooms.
 

Ingredients

  • 3/4 to 1 lb. shrimp
  • Juice of 2 limes
  • Juice of 1 lemon
  • 1 tablespoon Cajun seasoning
  • 2 teaspoon chipotle chili powder or regular chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons butter
  • 1 tablespoon extra virin olive oil
  • 1/2 onion, diced
  • 1/2 red bell pepper, diced
  • 1 jalapeno, diced very fine
  • 4-5 mushrooms, diced
  • 1-2 stems cilantro
  • 1/2 cup tequila
  • 1/2 tsp salt
  • Pepper to taste
  • Tortillas

Method

Peel and devein shrimp then rinse with water. Combine next 6 ingredients in a resealable bag or a bowl. Add shrimp and coat with marinade, then place in fridge to marinate up to 2 hours. Heat a wok or deep skillet on medium heat. Add butter and oil; add remaining ingredients to skillet. Saute 15 minutes, then add shrimp with about HALF of the marinade. (Discard remaining marinade.) Simmer, stirring occasionally, until liquid has thickened about 25 minutes.

 

Notes: Serve in warmed tortillas with a side of black beans, lime and cilantro. You can also make pico de gallo and guacamole for sides, or serve over rice.
