Spicy Shrimp & Peas


Shrimp and snow peas in a slightly sweet, slightly spicy, coconut and curry flavored sauce.



Ingredients:

  • 2 Tablespoons olive oil
  • 1 medium onion (slice thinly)
  • 4 garlic cloves (minced)
  • 1 heaping Tablespoon of minced fresh ginger
  • 1 Tablespoon of red curry paste (madras style)
  • 2 plum tomatoes chopped
  • 1 cup water
  • 1 can of coconut milk (I prefer Hokan Grade A)
  • 1/2 chicken bouillon cube
  • 1 1/2 Tablespoons of soy sauce
  • 2 Tablespoons of rice wine vinegar
  • 30 medium frozen or fresh shrimp-(peeled and deveined with tail removed)
  • one package of fresh snow peas, stringed and cut diagonally
  • Salt to taste
  • 2-3 shakes of red pepper flakes

Method

Heat the oil in a large pan over medium-high heat. Once hot add the onions and cook until translucent, about 7 minutes. Add chopped garlic, ginger, and red pepper flakes and cook an additional 2 minutes. Add the curry paste and stir until it is fully incorporated about 2 minutes. You can always add more curry paste to suit your taste. Add water, bouillon, tomatoes and soy sauce and simmer over low heat for 10 minutes. Add the coconut milk and vinegar and move to medium high heat. Add defrosted shrimp or fresh shrimp and the snow peas and cook for 3 to 4 minutes. Serve over basmati or your favorite rice.
