Spinach and Tofu Soup


A quick soup made with tofu, shrimp and spinach. This soup is seasoned with fish sauce and onions.



Ingredients:

  • 2 tbsp. dried shrimp  
  • 4 cups chicken stock  
  • 8 oz. tofu, cut into cubes  
  • 2 tbsp. fish sauce  
  • 12 oz. fresh spinach  
  • black pepper  
  • 2 green onions, finely sliced for garnish

Method

Rinse and drain the dried shrimps. Combine the shrimp with the chicken stock in a large saucepan and bring to a boil. Add the tofu and simmer 5 minutes. Season with fish sauce and black pepper. Tear the spinach leaves into bite size pieces and add to the soup. Cook for 1 to 2 minutes. Remove from heat and sprinkle with green onions.
