Swordfish Nicoise on Pasta

The classic flavors of Salad Nicoise, combined with grilled swordfish and penne pasta for an elegant meal.
 

Ingredients

  • 5 tbsp high quality olive oil
  • 2-3 swordfish steaks
  • 1/4 cup chopped pitted Kalamata or Nicoise olives
  • 3-4 large tomatoes
  • 6 tbsp finely chopped flat leaf parsley
  • 2 tbsp capers, chopped fine
  • 2 flat anchovy fillet, minced (or 2 tsp pureed)
  • 2 cloves garlic, mashed into a paste with 1/2 tsp salt
  • 4 tbsp minced scallion
  • 3 tbsp balsamic or red wine vinegar
  • 1 lb penne or similar pasta

Method

Boil water for pasta. Grill swordfish steaks and chop into bite sized pieces. Mix with remaining ingredients, except pasta. Cook pasta in salted water to just al dente then add to sauce/swordfish mixture.
