Tangy Tuna-Rice Salad


This salad is light and healthy and makes a great lunch or summer dinner.



Ingredients:

  • 1 cup chopped onion
  • 1 cup chopped celery
  • 5 cups cooked white rice
  • 1 12 oz. can water packed tuna (drained)
  • 4 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup light mayo
  • Tomato slices or wedges (optional)

Method

Simply mix all the above ingredients together (except the tomatoes) until well blended. Serve with fresh tomato slices or wedges. May be served immediately or chilled.
