Thai Green Curry Stir Fried Seafood with Pine

Flavors of the Orient infuse this creamy seafood and pineapple main dish--serve with rice.
Ingredients
- 24 large shrimp
- 12 oz bay scallops
- 8 oz lump crabmeat
- 1 fresh pineapple: peeled, cored and cut into chunks
- 1/4 cup raisins
- 1 cup coconut cream
- 1 tablespoon green curry paste
- 2 teaspoons sugar
- 2 tablespoons fish sauce
- 1 tablespoon tamarind sauce
- 2 cups coconut milk
- 4 cups cooked boiled rice

Method
Heat coconut cream in a wok, over medium heat, and stir 1-2 minutes. Add curry paste and stir over low heat for 2-3 minutes until fragrant. Add sugar, fish sauce and tamarind, then stir well. Gradually add coconut milk and stir. Add shrimp, scallops and crabmeat then simmer until shrimp just change color. Add pineapple and raisins then simmer 1-2 minutes until heated through.
Notes: Serve with rice.
