Tilapia Tacos


Tilapia is a healthy way to make a taco. What a creation!



Ingredients:

  • 1 pound tilapia filets, cut into 1/2" strips
  • 1/2 cup flour, seasoned with 1 tsp cayenne and 1 tsp salt
  • 3 tbsp canola oil for cooking
  • 2 cups shredded cabbage
  • 4 tbsp Thousand Island dressing
  • 1 tbsp sour cream
  • Juice from 1/2 lemon
  • Hot sauce to taste
  • 8 small flour tortillas

Method

Mix dressing, sour cream and lemon juice. Add salt, pepper and hot sauce to taste. Rinse fish and dredge in flour mix. Saute in a nonstick fry pan for 2 minutes on medium high heat. Turn and cook another 2 minutes. Meanwhile warm tortillas in a damp towel in microwave. Distribute fish and cabbage to each tortilla, drizzle dressing and serve.
