Truffled Salmon

This elegant dish for one has pasta in a whipping cream sauce with tomatoes, spinach, and truffle oil, and a fillet of salmon place on top.
Ingredients
- 6-8 oz. salmon fillet, skinned
- 8 grape tomatoes, cut in half
- Handful spinach
- 4 oz. heavy whipping cream
- 2 tsp. compound butter with roasted garlic
- 1 oz truffle oil
- Salt and pepper to taste
- 4 oz thick ribboned pasta, cooked and drained

Method
Sear salmon in saute pan until golden brown on both sides. Remove salmon from pan and place in 400 degree oven on a baking sheet with sides. Then add tomatoes, spinach, salt and pepper to saute pan. Cook just until spinach is wilted; add heavy cream, truffle oil, and butter; cook to let cream reduce. Finally add pasta to pan and toss. Place pasta in bowl and top pasta with salmon. Bake in 400 degree oven for 4 minutes.
