Tuna and White Bean Salad

The key to this simple salad is to use the best tuna you can find. Serve it as a side dish for your next dinner party.
 

Ingredients

  • 1 6 ounce can tuna packed in olive oil
  • Extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/3 cup choppped red onion
  • 3 tablespoons chopped fresh parsley
  • 4 teaspon chopped fresh sage or 1 teaspoon dried sage leaves
  • 1 15- to16- ounce can cannellini beans,drained well
 
Method

Drain oil from tuna into medium bowl. Add enough olive oil to measure 3 tablespoons total; whisk in vinegar. Add onion, parsley and sage. Mix in beans and tuna. Season with salt and pepper.

 

Notes: 1. This recipe can be doubled. 2. For chicken soup, good canned chicken broth and frozen vegetables can be used if fresh chicken soup in not available. 3. Use the best canned Italian tuna in olive oil you can find.
