Tuna Over Jasmine Rice

Warm jasmine rice is the base for this fresh tuna salad. What a fresh and light dish for lunch or a great side to a dinner.

  • Servings: 4

Ingredients:

1 Large Can Albacore Tuna, drained
½ cup Diced Onion
1 Tbsp Malt Vinegar
½ tsp Salt
1 tsp Pepper
2 cups Jasmine Rice
4 cups Water

Directions:

In a medium bowl, add tuna, onion, malt vinegar, salt, and pepper. Stir well and refrigerate. Meanwhile, in a medium saucepan, add water. Bring to a boil and add rice. Bring temperature down to a simmer. Cook 8 minutes uncovered, cook 8 minutes covered, then remove from heat. Spoon a generous amount of rice onto plate. Top with refrigerated tuna mixture.
