Tuna Tarragon Salad on Pita Chips

This gourmet treat makes a great light lunch or start to a meal. The seasonings and Swiss cheese compliment the tuna nicely.
 

Ingredients

  • 1/3 cup mayonnaise
  • 3 tablespoons chopped fresh chives
  • 4 tablespoons chopped fresh tarragon
  • 1 teaspoon minced lemon zest
  • 2 teaspoons lemon juice
  • 1 teaspoon Dijon mustard
  • Black pepper to taste
  • 1 12 ounce can solid white tuna packed in water, drained and flaked
  • Swiss cheese, sliced to fit pita chips
  • Pita chips

Method

Whisk together mayonnaise, chives, tarragon, lemon zest, lemon juice, Dijon mustard, and pepper in a bowl until well combined. Gently stir in flaked tuna, cover, and refrigerate until chilled, about 30 minutes. Top chips with Swiss cheese and spread tuna evenly over pita chips.
