Tuna Brunch Salad


A light, easy to prepare salad with tuna, hard boiled eggs, lettuce, tomatoes and cucumbers.



Ingredients:

  • 2 hard boiled eggs, minced and grated
  • 2 cans tuna fish, drained and flaked
  • 1 head lettuce, chopped
  • 1 large cucumber, diced
  • 2 tomatoes, chopped
  • 1 teaspoon lemon juice
  • 3/4 cup mayonnaise
  • 2 tablespoons milk
  • 1 teaspoon sugar or diet substitute
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

Method

Boil, mince and grate eggs using grater and set aside. Drain and flake tuna fish. Chop lettuce, cucumber, onion and tomatoes into small pieces and toss together in large bowl. In separate bowl whisk together lemon juice, mayonnaise, milk, sugar and olive oil, adjusting taste with salt and pepper. Pour dressing over tuna and salad, toss to coat; place on platter and top with eggs. Refrigerate until ready to serve.

Notes: This is a very versatile salad. Any cooked meat or vegetable can be added or substituted. I serve it with pumpernickel bread.
