Twice as Nice Thai Style Rice Porridge

Two varieties of rice-white and brown combine with Thai flavors in a creative twist on a classic Asian comfort food recipe also known as congee or jook.

½ cup Long Grain White Rice
½ cup Brown Rice
4 cups Chicken Broth
1 cup Unsweetened Light Coconut Milk
1 tsp Green Curry Paste
1 tsp Soy Sauce
1 tsp Grated Ginger Root
1 clove Garlic, crushed
¼ cup sliced Green Onion
1 Small Mango, chopped
2 Tbsp Snipped Mint
2 Tbsp Snipped Cilantro
½ cup Chopped Cooked Shrimp
½ cup Slivered Snow Peas
1 Tbsp Lime Juice
Garnish- Chopped Roasted Peanuts & Lime Zest


In a 4 quart pan place the white and brown rice, broth, coconut milk, curry paste, soy sauce, ginger root and garlic. Bring to a boil over medium high heat. Cover and reduce the heat to a simmer. Cook 45 minutes or until the rice has a thick porridge consistency. Stir in the rest of the ingredients. Ladle into bowls and garnish with the peanuts and zest.
