West African Crab Soup

Crabmeat, squash, tomatoes and yam are cooked in a pot of water with olive oil, parsley and black pepper. You may substitute crawfish for the shrimp, if you wish.

  • Servings: 5-6

Ingredients:

1 lb Crabmeat, diced
1 tsp Black Pepper
1 Summer Squash, diced
2 Tbsp Minced Parsley
½ cup Olive Oil
4 Tomatoes, diced
1 Yam, peeled & diced

Directions:

Simmer everything in a pot of water for 45 minutes, stirring once in a while. To be more authentic, use diced crawfish, if desired.
