Zingy Shrimp Salad

This fresh, chilled shrimp and pasta salad is a great addition to any BBQ.
 

Ingredients

  • 1 lb small to medium shrimp; peeled, deveined and cooked
  • 1/2 pound elbow macaroni
  • 1 teaspoon crushed red pepper
  • 1/2 cucumber, peeled and diced
  • 10 grape tomatoes, halved
  • 1 teaspoon parsley
  • 1 teaspoon paprika
  • 1-2 tablespoons mayonnaise
  • Salt and pepper to taste

Method

Cook macaroni, rinse in cold water, and place in a large bowl. Remove tips of shrimp and add to macaroni. Cut, peel and dice cucumber then add to salad. Cut tomatoes and add to salad. Add mayonnaise and mix, then add crushed red pepper, parsley, paprika and mix again. Salt and pepper to taste.
